My New Favorite Snack

My current favorite, in light of the fact that my husband is harvesting a bumper crop of tomatoes this year, is the following: 

Buttered popcorn rice cakes with 1-2 Tbsp. of hummus and a nice fat tomato slice (50-75 calories each).  This is a great thing to eat when you are going for a good crunch and some significant volume.  The combination is delicious.  While we’re at it, try hummus on just about anything.  It’s a great low calorie veggie dip and also makes a great mayonnaise substitute on a sandwich.  Hummus comes in lots of flavors, so most people can find one they like.
