I found this today at the grocery store, in the refrigerated section with the tofu. They also had tofu shaped like spaghetti. It has an interesting texture, pleasantly rubbery (if that is possible). I actually liked it in my soup.
What are the benefits? Well, it has very few calories – a serving (half the bag) has only 20 – and a little bit of protein and fiber. They tell you to drain and rinse it well before cooking for 2-3 minutes. You can use it as you would any kind of noodle, with your choice of sauce. If you try it, I will give you fair warning: it has an “unusual” smell (what the package calls “authentic aroma”) when you open the package, so I recommend rinsing well.
