Lime Cilantro Vinaigrette

On my recent vacation in Key West, Florida, I had a delicious Southwestern main-dish salad with chicken and black beans.  Mmmm!  I asked the server what was in the dressing, and she brought back a list of the ingredients, but not a recipe.  After an experiment or two, this is the result, a nice lime cilantro dressing with about 130 calories per 2 Tbsp. serving.

Lime Cilantro Vinaigrette

6 Tbsp. olive oil

4 Tbsp.  orange juice

2 Tbsp. lime juice

1 small garlic clove, minced

4 tsp. honey

1/8 tsp. salt

1 Tbsp. chopped cilantro

Blend all ingredients well with a wire whisk.

Serving suggestions:  Add chicken, black beans, and avocado slices to your favorite blend of greens, and mix it well with some of the dressing.  You can add a little grated cheddar cheese if you like.  OR, try this dressing on a mixture of drained and rinsed canned black beans and rice.  I might add some chopped tomatoes, cucumbers, and purple onion.
