What Am I Eating Tonight?

Isn't that gorgeous?

I tried a new vegetable blend for my roasted vegetables tonight – purple onion, brussels sprouts, carrots, and red pepper.  This picture shows the pan before roasting.  It was delicious after cooking with a little olive oil.  The brussels sprouts were particularly tasty.  What a great example of brightly colored vegetables and all the nutrients they represent!

To roast, just put into the oven at 400 degrees for about 25 minutes.
